Pesto Chicken "Zoodles"

While this recipe has nothing to do with football or tailgating, I had SO many requests for the recipe when I posted if on my Facebook page that I figured this would be the easiest place to share it!

This dinner was unbelievably good and you couldn't tell it was healthy by how great it tasted! In fact, my husband even told me, "You are getting better and better at making healthy foods taste awesome!"

In order to make the "noodles" i used a Vegetti. I bought mine at Bed Bath & Beyond for around ten or fifteen dollars. It's one of those items close to the register...I'm a sucker for those!

I cooked 2 chicken breasts on the skillet with olive oil, salt, and pepper. You can cook the chicken any way you like. I spiralized 1 zuchinni and 1 squash, but could have done another one, as well. My vegetti came with directions on different ways you could cook the zuchinni- you can boil it, saute it- whatever! I chose to saute it this time and I liked how it came out.

After the chicken and zuchinni were done cooking I added half a jar of pesto. You can make it or buy it. It's pretty expensive to make and much easier to just buy it, so that's what I did ;) I let them cook all together on low for a few minutes, then topped with some mozarella, and VOILA!

This is a great recipe if you are gluten free or just trying to cut out refined carbs and get more veggies into your diet. I know you won't be disappointed with this healthy recipe!

Serves 2

Ingredients:

-2-3 zuchinni/squash

-2 grilled chicken breasts

-1/4 cup pesto

-olive oil

-salt and pepper to taste

-mozarella cheese for topping

Directions:

Spiralize zuchinni and cook however you like. (I prefer sauteing it with olive oil). Slice grilled chicken into bite-size pieces. Combine cooked zuchinni, grilled chicken, and pesto and cook together on low for several minutes. Top with cheese and serve hot.
